The 1st Souk kitchen

Make more of your everyday essentials.

Practical recipes with ingredients, quantities and clear steps. Start with a cup of coffee or a drink made with your prepared plant milk.

Coffee · 1 cup

Your first pour-over

A simple starting point for the V60-style kit. Adjust your next brew to suit your beans and taste.

About 5 minutes

Ingredients

  • 15 g coffee beans, ground medium for filter coffee
  • 250 ml hot water, plus extra for rinsing the filter
  • 1 paper filter that fits your dripper

Method

  1. Place the dripper and filter over the server. Rinse the paper with hot water and discard the rinse water.
  2. Add the ground coffee. Place the server and dripper on the scale, then zero the scale.
  3. Heat water separately and let it cool briefly. The included gooseneck kettle does not heat water electrically.
  4. Start the timer and wet all the grounds with a small pour. Wait about 30 seconds.
  5. Pour slowly in circles until you have added 250 g of water in total. Keep the water below the top of the filter.
  6. Let the coffee drain, remove the dripper and serve. Allow the drink to cool before tasting.

For your next cup: a coarser grind can help reduce bitterness; a finer grind can help if the coffee tastes weak. Change one thing at a time.

Plant milk · 1 serving

Iced vanilla plant-milk latte

Put your freshly prepared almond or oat drink to use. Mix this drink in the glass after making and cooling the plant milk.

5 minutes · prepared milk needed

Ingredients

  • 150 ml prepared, cooled almond or oat drink
  • 60 ml strong brewed coffee, cooled
  • ¼ teaspoon vanilla extract
  • 1 teaspoon maple syrup, optional
  • Ice, to fill one serving glass

Method

  1. Prepare plant milk using the quantities and programme in your appliance manual. Allow it to cool before making this iced drink.
  2. Fill a serving glass with ice. Stir the vanilla and optional syrup into the prepared plant milk.
  3. Pour the plant milk into the glass, then add the cooled coffee.
  4. Stir, taste and adjust sweetness. Serve immediately.

Use a serving glass for the ice, coffee and flavourings. These quantities are for the finished drink, not instructions for a milk-maker cycle. Contains nuts if made with almond milk.

Plant milk · 1 serving

Banana, date & cinnamon smoothie

A short ingredient list for a creamy breakfast drink. This recipe needs a separate blender.

5 minutes · prepared milk needed

Ingredients

  • 200 ml prepared, cooled plant milk
  • 1 ripe banana, peeled and sliced
  • 2 soft dates, stones removed
  • A pinch of ground cinnamon

Method

  1. Prepare and cool your plant milk according to the appliance manual.
  2. Check that both dates are fully pitted. Add the plant milk, banana, dates and cinnamon to a separate blender.
  3. Blend until smooth. Add a little more prepared plant milk if you prefer a thinner texture.
  4. Pour into a glass and serve immediately.

Use a separate blender for this smoothie. Do not put whole dates or banana into the milk maker unless its manual explicitly allows them. Check your chosen plant milk for allergens.
